Orange scented Pancakes with Galloping Cows Peach Melody Spread, and Greek Yogurt

INGREDIENTS
1 cup all-purpose flour
2 Tbs granulated sugar
1 ½ tsp baking powder
½ tsp kosher salt
1 cup milk
1 egg
1 tsp vanilla extract
1 Tbs orange zest
4 Tbs unsalted butter, used separately
4 Tbs Galloping Cows Peach Melody Spread
4 Tbs Greek Yogurt
Maple Syrup
PREPARATION
Step 1
In a large bowl, sift together flour, sugar, baking powder and salt. In a separate bowl, whisk together milk, egg, vanilla extract and orange zest.
Step 2
Add wet mixture to dry and mix together with a wooden spoon until well combined. Do not over mix, a few lumps are fine.
Step 3
Melt the first tablespoon of butter in a large non-stick skillet over medium heat. Ladle pancake mixture into 3-inch rounds in the skillet. You should be able to fit 2-3 in a large skillet. Cook pancakes until bubbles form on the top and some have burst. Flip carefully with a spatula and cook until golden. About 1-2 minutes more. Repeat with remaining butter and pancake batter. Serve warm topped with Galloping Cows Peach Melody Spread, Greek yogurt and maple syrup.
